RECIPE NO. 1 Chicken and Eggplant Teriyaki INGREDIENTS: 1 kilogram chicken leg quarters, cut into serving pieces 1 1/4 tbsp soy sauce, 1 tsp oyster sauce, 1/2 tsp sugar, 1/2 tsp black pepper, 1 tsp baking soda, 5 tbsp cornstarch, 2 tbsp water 350g eggplant, cut into 3-inch pieces 1 small onion, chopped 4 cloves garlic, minced 10 tbsp teriyaki sauce 1/2 tsp chicken powder seasoning 2 stalks green onion, sliced FOR THE TERIYAKI SAUCE: 1/2 cup soy sauce 3-4 tbsp brown sugar 1/4 cup water 2 tbsp rice vinegar (or white vinegar) 1 tbsp sesame oil (optional) 2 tsp minced garlic 2 tsp grated ginger 1/2 tbsp cornstarch + 2 tbsp water (cornstarch slurry) Combine all ingredients in a sauce pan. Bring to a simmer over medium heat, stirring until sugar dissolves. Add cornstarch slurry and stir until sauce thickens (about 2 minutes).
