Today am sharing this delicious and easy to make and quick quinoa zucchini with onions and green peppers, a dish that you can do on any day of the week. One of my favorite one pot dishes which is a stir fry as well as a warm salad. This very summery dish is all about utilizing what is in season and readily available pantry staples. INGREDIENTS 1 Tbs Cooking oil ( Avocado oil ) 1/2 cup Yellow onions, diced medium 1 Medium zucchini, washed , diced medium 1 cup Green Beans, trimmed, washed and cut about 2 inch 1 cup Bell peppers, diced ( red/orange ) 1Tbs Garlic, chopped 1/2 Tbs Ginger, minced 1 Tsp Cumin seeds 1/2 Tsp Fennel seeds 1 Tsp Oregano Pinch red pepper flakes 2 Medium Roma tomatoes, washed, deseeded, diced medium 1.5 cups Cooked Quinoa Click for recipe •ChickpeasQuinoaandLotsVegetablesStir... 1 Lemon juiced and zested 2 Tbs Extra virgin olive oil or as needed for finishing 1/4 Tsp Freshly ground black pepper Kosher salt to taste 2 Tbs Scallions, chopped whites and greens separated 2 Tbs Parsley, chopped for finishing and garnishing.
