If you attend any event in Arua or in many parts of northern Uganda, you will find this side dish on the buffet line. Traditionally, it is cooked using 3 ingredients, pigeon peas (burusu, lapena), peanut butter and sesame butter. The charm in this dish lies with cooking the nut butters over very low heat until they create their own oil. The oil is strained and set aside. The cooked peas are added to and coated with the hot butter and the oil is poured back over the peas. Its sooo good I tell you. In this video I am cooking things my way. I added mushrooms, onions, tomatoes and chili and didn’t use sesame butter. Would my mum turn in her grave for me “messing up” ucakuca like this? No, I believe she’s smiling down from heaven and saying, “my eye had never seen it done in this way, you go my daughter” #2 CORINTHIANS 2:9. Ha! Oh by the way if you don’t have pigeon peas, you can absolutely use garden peas or beans like borlotti and pinto. INGREDIENTS (serves 4) 2 cups Cooked fresh pigeon peas 1 tbsp Cooking oil 2 cups Fined chopped mushrooms 1 Onions, diced ¼ cup Homemade tomato sauce 3 tbsp Natural peanut butter ½ tsp Chili powder (optional) 3 – 4 tbsp Chopped fresh coriander Salt to taste Enj😄y.
